  • Juice of 1 lime
  • ½ teaspoon smoked paprika
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon cayenne pepper
  • 1 cup beef broth
  • 3 tablespoons tomato paste
  • Salt and pepper to taste

Instructions

  1. Combine all seasonings in a bowl. Pat the chuck roast dry and rub with the seasoning mixture.
  2. Heat oil in a skillet over medium-high heat; sear each side of the roast until golden brown (about 3-4 minutes per side).
  3. Transfer the seared beef to the slow cooker and top with diced onion and minced garlic.
  4. Pour in beef broth and mix in tomato paste.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
  6. Shred the beef using two forks and return it to the slow cooker to mix with the sauce.
