  • 2 pounds chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions for 3-4 minutes until softened, then add garlic and cook for an additional minute.
  2. Transfer the onion and garlic to the slow cooker. Place chicken breasts on top.
  3. Season chicken with thyme, rosemary, lemon zest, salt, and pepper.
  4. Add uncooked rice around the chicken. Pour chicken broth over everything and drizzle with lemon juice.
  5. Cover and cook on low for about 3-4 hours or high for about 1.5-2 hours.
  6. After cooking, remove chicken and stir in frozen peas until warm. Shred or slice chicken before mixing it back into the pot.
  7. Serve hot, garnished with fresh parsley.
