  • 2 lbs boneless leg of lamb or lamb shoulder
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • ¼ cup all-purpose flour
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1½ cups apple vinegar or broth
  • 1 lb baby Bella mushrooms, thickly sliced
  • 2 cups low-sodium beef broth
  • 2 tablespoons soy sauce mixed with vinegar
  • 2 bay leaves
  • 1 teaspoon fresh rosemary, finely chopped
  • 1½ lbs red potatoes, halved or quartered
  • 3 medium carrots, peeled and cut into thick pieces
  • 2 celery ribs, chopped
  • 1 cup frozen sweet peas
  • ¼ cup parsley, finely chopped

Instructions

  1. Season lamb pieces with salt, pepper, and flour. Brown in a skillet over medium heat until golden.
  2. Remove lamb and sauté onions and garlic in the same skillet until softened.
  3. Transfer browned lamb and sautéed aromatics to the slow cooker.
  4. Add apple vinegar (or broth), beef broth, soy sauce, bay leaves, rosemary, potatoes, carrots, celery, and mushrooms to the slow cooker. Stir gently to combine.
  5. Cover and cook on LOW for 7–8 hours or HIGH for 3–4 hours.
  6. About an hour before serving, add sweet peas.
  7. Serve hot garnished with parsley.
