  • 2 lbs boneless skinless chicken breast or thighs
  • 1 onion, thinly sliced
  • ¼ cup chicken broth
  • 1 lemon, juiced (about 3 tablespoons)
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions

  1. Place chicken in the slow cooker and layer with sliced onion.
  2. In a small bowl, whisk together chicken broth, lemon juice, garlic, olive oil, oregano, thyme, salt, and pepper. Pour over the chicken.
