- 3 boneless skinless chicken breasts
- ½ cup all-purpose flour
- ½ teaspoon salt
- 1 teaspoon pepper
- ½ teaspoon garlic powder
- 12 ounces mushrooms
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 2 large shallots, sliced thin
- ½ cup dry white grape juice
- 1 ½ cups low sodium chicken broth
- ½ cup heavy cream
- 2 large sprigs of fresh thyme
- 1 teaspoon Dijon mustard
- 2 teaspoons cornstarch (dissolved in 2 tablespoons water or broth)
- Pat chicken breasts dry and cut them into thinner cutlets.
- Dredge chicken in a mixture of flour, salt, pepper, and garlic powder.
- Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a skillet; cook chicken until golden brown on both sides.
- Add remaining butter to the skillet and sauté mushrooms until browned.
- Stir in shallots and garlic; deglaze with apple vinegar and add broth, thyme, mustard, and cream.
- Return chicken to the skillet; simmer until heated through.
- Serve garnished with fresh herbs.
