  • 3 boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon garlic powder
  • 12 ounces mushrooms
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 2 large shallots, sliced thin
  • ½ cup dry white grape juice
  • 1 ½ cups low sodium chicken broth
  • ½ cup heavy cream
  • 2 large sprigs of fresh thyme
  • 1 teaspoon Dijon mustard
  • 2 teaspoons cornstarch (dissolved in 2 tablespoons water or broth)

Instructions

  1. Pat chicken breasts dry and cut them into thinner cutlets.
  2. Dredge chicken in a mixture of flour, salt, pepper, and garlic powder.
  3. Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a skillet; cook chicken until golden brown on both sides.
  4. Add remaining butter to the skillet and sauté mushrooms until browned.
  5. Stir in shallots and garlic; deglaze with apple vinegar and add broth, thyme, mustard, and cream.
  6. Return chicken to the skillet; simmer until heated through.
  7. Serve garnished with fresh herbs.
