  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/4 cup green olives, pitted and chopped
  • 2 tablespoons capers, drained
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Blanch the cauliflower by boiling salted water and cooking the florets for 2-3 minutes until slightly tender but still crisp. Drain and rinse under cold water.
  2. In a bowl or jar, whisk together olive oil, apple cider vinegar, lemon juice, Dijon mustard, salt, pepper, and oregano until combined.
  3. In a large bowl, combine the blanched cauliflower with Kalamata olives, green olives, capers, red onion, cherry tomatoes, and parsley.
  4. Pour the dressing over the salad mixture and toss gently to coat.
  5. Let the salad sit for about 10-15 minutes before serving.
