  • 1 lb large shrimp (peeled and deveined)
  • 4 tbsp unsalted butter (divided)
  • 2 tbsp olive oil
  • 4 garlic cloves (minced)
  • 1/4 cup dry white grape juice (or chicken broth)
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste
  • 4 thick slices of French or Italian bread

Instructions

  1. Preheat oven to 375°F (190°C). Spread garlic butter on each slice of bread and place on a baking sheet. Bake for 8-10 minutes until golden.
  2. In a large skillet over medium heat, melt 1 tablespoon olive oil and 2 tablespoons butter. Sauté minced garlic for 1-2 minutes until fragrant.
  3. Add shrimp, season with salt and pepper, and cook for about 2-3 minutes per side until pink and opaque. Remove from skillet.
  4. In the same skillet, add remaining butter and grape juice or broth; simmer for 1-2 minutes. Stir in lemon juice and red pepper flakes.
  5. Return shrimp to skillet, toss in sauce, and garnish with parsley.
  6. Serve shrimp scampi in bowls alongside warm garlic bread.
