  • 3 tablespoons extra virgin olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • ½ lb. fresh squid, sliced into rings
  • 2 cups fresh tomato, chopped
  • 2 tablespoons tomato paste
  • 2 cups Spanish paella rice
  • 4 to 5 cups chicken stock
  • 12 oz fresh shrimp, peeled and deveined
  • ½ pound mussels, scrubbed and de-bearded
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the onion until soft.
  2. Stir in garlic and squid; cook briefly until squid is opaque.
  3. Add tomatoes, tomato paste, salt, pepper, smoked paprika, and saffron; mix well.
  4. Incorporate rice and stir gently until coated.
  5. Pour in chicken stock; bring to a boil then reduce heat to simmer uncovered.
  6. After about 15 minutes, add shrimp and mussels on top; cover until cooked through.
  7. Garnish with parsley and serve with lemon wedges.
