  • 2 cloves garlic, minced
  • 1 teaspoon fresh sage, chopped (or ½ teaspoon dried)
  • Salt and pepper to taste
  • ½ cup vegetable broth
  • ½ cup coconut cream (or your preferred plant-based cream)
  • 12 ounces fettuccine or penne pasta

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 20-25 minutes until tender.
  2. Boil salted water in a large pot and cook fettuccine or penne according to package instructions until al dente. Reserve some pasta water before draining.
  3. In a skillet over medium heat, sauté onion in olive oil until translucent (about 5 minutes), then add garlic and sage until fragrant.
