  • 1 pound turkey sausage (mild or hot)
  • 5 tablespoons unsalted butter (divided)
  • 1 tablespoon olive oil
  • 21/4 cups mirepoix (or 3/4 cup each: diced carrots, celery, and yellow onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock (or broth)
  • 6 tablespoons flour
  • 3 cups milk (1%, 2%, or whole)
  • 2 cups shredded extra-sharp Cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, cook the turkey sausage until browned. Remove and set aside.
  2. In the same pot, melt 1 tablespoon of butter, then sauté mirepoix for about 5–7 minutes until softened.
  3. Add in chopped potatoes along with chicken stock; bring to a boil then reduce heat and simmer covered for 15–20 minutes until tender.
  4. In another pot, melt remaining butter to make a roux with flour. Gradually whisk in milk until thickened.
  5. Combine the creamy mixture into the potato soup pot along with shredded cheese and cooked sausage. Stir until melted and creamy.
  6. Adjust seasoning as needed before serving hot.
