  • 1 pound smoked sausage, sliced
  • 1 1/2 pounds baby potatoes, halved
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Parboil the halved baby potatoes in salted water for 8–10 minutes until fork-tender; drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat; add sausage slices and cook until browned (4–5 minutes). Remove from skillet.
  3. In the same skillet, add remaining olive oil; sauté onion and garlic for about 2 minutes before adding bell pepper. Cook for another 3–4 minutes until softened.
  4. Mix in parboiled potatoes along with smoked paprika, Italian seasoning, salt, and black pepper. Cook for another 5–7 minutes until golden and crisp.
  5. Return sausage to the skillet; stir well to combine. If using spinach, add it during the last two minutes of cooking to wilt.
  6. Serve hot and garnish with fresh parsley.
