  • 1/2 cup sour cream
  • 3 medium apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 325°F (163°C) and prepare a 9-inch springform pan.
  2. Combine graham cracker crumbs, sugar, and melted butter; press into the pan. Bake for 10 minutes.
  3. Beat cream cheese until smooth; add sugar, eggs one at a time, vanilla, and sour cream until combined.
  4. Pour filling over cooled crust; bake in a water bath for 55–65 minutes until set but jiggly.
  5. Cool gradually in the oven with the door ajar for an hour.
  6. Sauté apples with butter, brown sugar, cinnamon, and nutmeg until soft; set aside to cool.
  7. For caramel: melt sugar until amber; add butter and heavy cream while whisking; stir in sea salt.
