  • 8 cups mixed greens
  • 1/2 red onion (thinly sliced)
  • 1 cup cucumber (thinly sliced)
  • 1 medium ripe avocado (diced)
  • 1/2 cup roasted and salted pepitas
  • 1/4 cup shaved Parmesan cheese (optional)
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Make the dressing by combining olive oil, Dijon mustard, honey, apple cider vinegar, salt, and pepper in a jar. Shake until well blended.
  2. In a large bowl, add mixed greens and drizzle half of the dressing over them. Toss gently to coat.
  3. Add sliced red onion, cucumber, diced avocado, and pepitas to the bowl. Drizzle remaining dressing as desired and toss lightly.
