  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Fresh Thyme
  • 2 tbsps Fresh Rosemary, chopped
  • 1 Red Onion, sliced
  • 12 Honeycrisp Apples, sliced
  • 4 tbsps Salted Butter
  • 3/4 cup Apple Cider
  • 1/2 cup Chicken Broth or white grape juice
  • 2 tbsps Dijon Mustard
  • 3 cloves Garlic
  • Olive oil, Salt, Pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Season chicken thighs with onion powder, garlic powder, smoked paprika, thyme, salt, and pepper.
  3. In an oven-safe skillet over medium-high heat, add olive oil and sear chicken thighs skin-side down until golden brown, about 5-7 minutes per side.
  4. Add sliced onions and apples around the chicken; then transfer to the oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C).
  5. For the sauce, combine butter, apple cider, broth (or juice), Dijon mustard, and minced garlic in the skillet to deglaze and whisk until combined.
  6. Simmer until thickened slightly before returning chicken and apples to the pan to coat with sauce.
