  • 1 teaspoon balsamic vinegar
  • Pinch of salt
  • 1 cup ricotta cheese (room temperature)
  • 1 tablespoon honey (for whipped ricotta)
  • 1/2 teaspoon vanilla extract
  • 4 slices of crusty bread (toasted)
  • Fresh thyme or basil leaves (optional)
  • Extra honey for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss sliced strawberries with 1 tablespoon honey, balsamic vinegar, and a pinch of salt. Spread in a single layer on the prepared baking sheet.
  3. Roast strawberries for 20-25 minutes until soft and caramelized.
  4. In another bowl, combine ricotta cheese, 1 tablespoon honey, and vanilla extract. Whip until smooth and creamy.
  5. Toast slices of bread until golden brown.
