  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. In a bowl, combine olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper to create the marinade.
  2. Place the chicken in a large bowl or resealable bag; pour half of the marinade over it and coat well. Marinate in the fridge for at least 30 minutes or overnight.
  3. Preheat your oven to 425°F (220°C).
  4. Arrange the marinated chicken in a roasting pan with quartered onions and pour in the remaining marinade.
  5. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally.
  6. Let the chicken rest for about 10 minutes before carving.
