  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic by cutting off the top, drizzling with olive oil, seasoning with salt, wrapping in foil, and baking until soft.
  3. Grease a 9×13-inch baking dish.
  4. Thinly slice the potatoes using a mandoline.
  5. Layer potato slices upright in the greased dish.
  6. In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until combined.
  7. Squeeze out roasted garlic cloves into a bowl and mash; mix into the cream mixture.
  8. Pour the creamy mixture over the layered potatoes.
  9. Cover with foil and bake for about 40 minutes.
  10. Remove foil, sprinkle remaining cheeses on top, and bake uncovered for another 30 minutes until golden brown.
  11. Let cool slightly before serving and garnish with chives.
