  • Olive oil
  • ¼ cup freshly squeezed lemon juice
  • 1 tbsp Dijon mustard
  • 3 anchovy fillets (or substitute with capers)
  • ½ cup grated plant-based cheese (or Parmesan)
  • 1 bunch lacinato kale
  • ½ lb crusty Italian bread (for croutons)
  • Freshly cracked black pepper

Instructions

  1. Preheat oven to 300°F. Cut tops off garlic heads, drizzle with olive oil, wrap in foil, and roast until soft.
  2. Increase oven temperature to 425°F. Arrange sliced bacon on a sheet pan and roast until crispy; drain on paper towels.
  3. In a food processor, blend lemon juice, Dijon mustard, anchovies (or capers), roasted garlic, and grated cheese. Gradually add olive oil until creamy.
  4. Roll and slice kale into ribbons. Massage with some dressing for about 30 seconds.
  5. Toast torn bread pieces in olive oil over medium heat until golden brown.
  6. Combine kale and romaine in a bowl; add remaining dressing and toss gently.
