  • 1/4 cup crumbled feta cheese or non-dairy alternative
  • 1/4 cup fresh basil, sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Cook orzo in salted boiling water until al dente; drain and cool under cold water.
  2. Whisk together olive oil, apple cider vinegar, lemon juice, honey, garlic, Italian seasoning, salt, and pepper for the dressing.
  3. In a large mixing bowl, combine cooled orzo with tomatoes, bell peppers, cucumber, onion (if using), feta (or alternative), and basil.
  4. Drizzle dressing over salad; toss well to coat.
  5. Chill for at least an hour before serving for best flavor.
