  3. Add halved garlic cloves to the brine mixture and simmer for 3-5 minutes.
  4. Pack the sliced onions and jalapeños into clean glass jars.
  5. Pour the hot brine over the vegetables until fully submerged. Allow to cool before sealing with lids.
  6. Refrigerate for at least 30 minutes before enjoying; they taste even better after 24 hours.
