  • 1 ½ tablespoons caraway seeds (plus more for topping)
  • 1 tablespoon kosher salt (17 grams)
  • 1 cup rye flour (120 grams)
  • 5 ½ cups all-purpose flour (780 grams)

Instructions

  1. In a large mixing bowl, combine lukewarm water and yeast; stir gently and let sit for five minutes until bubbly.
  2. Add rye flour, all-purpose flour, salt, and caraway seeds; mix until no dry bits remain.
  3. Knead briefly until smooth, then cover with plastic wrap and let rise in a warm place for about two hours or until doubled in size.
  4. Divide the dough into portions, shape into loaves, and place on parchment-lined baking sheets.
  5. Allow to rise again for 30-45 minutes while preheating the oven to 450°F (232°C).
  6. Sprinkle extra caraway seeds on top and make shallow slashes in each loaf before baking for 30-35 minutes until golden brown.
