  • 1/2 cup pumpkin puree
  • 3 tablespoons packed brown sugar
  • 1/2 teaspoon vanilla paste or extract
  • 1/4 teaspoon pumpkin spice mix
  • 1 teaspoon pure maple syrup
  • 2 round pre-made pie crusts
  • 1/2 cup confectionery sugar
  • 2 teaspoons pure maple syrup
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 375°F (190°C) and line a cookie sheet with parchment paper.
  2. Cut 4 rectangles from each pie crust and place 4 on the parchment paper.
  3. In a medium bowl, combine pumpkin puree, brown sugar, vanilla paste, pumpkin spice mix, and maple syrup until smooth.
  4. Spoon 2½ tablespoons of filling onto each rectangle, leaving space around the edges. Top with another rectangle and crimp to seal.
  5. Bake for 15-20 minutes until golden brown.
  6. While baking, mix confectionery sugar, maple syrup, and milk to create the glaze.
  7. Cool pop tarts slightly before drizzling with glaze.
