  • 1 teaspoon cinnamon (for cinnamon swirl)
  • ¾ cup (96g) all-purpose flour (for muffin batter)
  • ½ cup (64g) cake flour
  • 1 cup (210g) granulated sugar (for muffin batter)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • 2 large eggs (at room temperature)
  • ½ cup (120g) vegetable or canola oil
  • 1 cup (240g) pumpkin puree
  • 1 cup (112g) powdered sugar
  • 2 teaspoons milk
  • 1 teaspoon maple flavoring

Instructions

  1. Preheat your oven to 425°F (220°C). Grease or line a muffin pan.
  2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, and spices.
  3. In another bowl, combine eggs, vegetable oil, and pumpkin puree until smooth.
  4. Mix wet ingredients into dry ingredients until just combined.
  5. Spoon half of the batter into muffin tins. Sprinkle with cinnamon-sugar mix and top with remaining batter.
  6. Prepare the streusel by mixing flour, brown sugar, and melted butter until crumbly; sprinkle on top of muffins.
  7. Bake for 5 minutes at 425°F (220°C), then reduce temperature to 350°F (175°C) and bake for an additional 15-17 minutes until golden.
  8. Allow muffins to cool slightly before drizzling with maple glaze made from powdered sugar, milk, and maple flavoring.
