  • 4 medium sweet potatoes
  • 1 tablespoon olive oil (for sautéing)
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 to 1.5 cups protein of choice (lean ground turkey, black beans, chickpeas, or shredded chicken)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup fresh spinach
  • ½ cup shredded cheese (cheddar, mozzarella, or vegan alternative)
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Lightly coat a baking sheet with olive oil.
  2. Roast sweet potatoes for about 35–45 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers for about 5–7 minutes until softened.
  4. Add chosen protein to the skillet and cook until browned (if using beans or chickpeas, just warm them).
  5. Stir in minced garlic, cumin, chili powder, salt, and pepper; cook for another minute.
  6. Add spinach and mix until wilted.
  7. Scoop out some flesh from roasted sweet potatoes and combine with the filling mixture.
  8. Fill sweet potato halves with the mixture and top with cheese.
  9. Return to the oven for an additional 10 minutes until cheese is melted.
  10. Allow to cool slightly before garnishing with cilantro and serving.
