  • 1/2 cup hulled pumpkin seeds
  • 6 cups assorted salad greens
  • 2 cups curly endive (frisée)
  • 1 to 2 apples or pears, chopped
  • 2 avocados, sliced
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, goat, or feta)
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup apple cider vinegar
  • 2 tsp dijon mustard
  • 2 tbsp honey
  • 1 tbsp fig preserves
  • 2 tsp grated orange zest
  • 2 tbsp orange juice
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Toast the walnut halves and pumpkin seeds on a baking sheet for about 10 minutes until fragrant and golden.
  2. In a large mixing bowl, combine assorted salad greens and curly endive. Toss gently.
  3. Add chopped apples or pears, sliced avocados, pomegranate seeds, and crumbled cheese to the greens.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, dijon mustard, honey, fig preserves, orange zest, orange juice, and black pepper.
  5. Drizzle dressing over the salad just before serving and toss gently to combine.
