  • 170g unsalted butter
  • 300g dark chocolate, chopped
  • 3 large eggs
  • 250g granulated sugar
  • 120g all-purpose flour
  • 130g pistachios, roughly chopped
  • 227g white chocolate, finely chopped
  • 120g heavy cream
  • 3 tablespoons pistachio paste

Instructions

  1. Preheat oven to 335°F (170°C) and line a 9-inch square baking pan with parchment paper.
  2. In a bowl, whisk together the eggs and sugar until pale and thick.
  3. Melt the butter and dark chocolate in the microwave until smooth.
  4. Combine the melted chocolate mixture with the egg-sugar blend gently.
  5. Stir in vanilla and almond extracts, followed by sifting in flour and salt; fold in chopped pistachios.
  6. Pour batter into prepared pan and bake for 20–25 minutes until shiny with slight cracks.
  7. Cool completely before preparing ganache: heat cream, pour over white chocolate, stir until smooth, then mix in pistachio paste.
  8. Once brownies are cooled to room temperature, spread ganache evenly on top.
