  • 2 cups fresh basil
  • 1/2 cup (60g) pine nuts (or walnuts/cashews)
  • 1 clove garlic
  • 1/2 cup (120ml) olive oil
  • 2 cups (250g) cherry tomatoes (halved)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). On a baking sheet, drizzle halved cherry tomatoes with olive oil and season with salt and pepper. Roast for about 20 minutes until they caramelize.
  2. While tomatoes are roasting, combine fresh basil, pine nuts, garlic, and Parmesan cheese in a food processor. Blend while gradually adding olive oil until smooth.
  3. Cook the pasta according to package instructions until al dente; drain.
  4. In a large bowl, combine cooked pasta, roasted tomatoes, and pesto. Toss until evenly coated.
