  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 slices turkey bacon
  • 1 ripe avocado, sliced
  • 1 cup mixed salad greens (arugula, spinach, baby kale)
  • 4 whole wheat tortillas
  • 23 tablespoons pesto sauce (store-bought or homemade)
  • ½ cup cherry tomatoes, halved (optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Season chicken breasts with olive oil, salt, and pepper. Let sit for 5 minutes.
  2. Cook turkey bacon in a skillet over medium heat until crispy. Remove and set aside.
  3. Grill the chicken in the same skillet for about 5-7 minutes per side until cooked through (internal temperature of 165°F).
  4. Slice the grilled chicken and assemble wraps by spreading pesto on tortillas. Layer avocado, salad greens, turkey bacon, and optional tomatoes.
  5. Roll tightly and serve with a squeeze of lemon juice if desired.
