  • 1/3 cup granulated sugar
  • 1/2 cup smooth peanut butter
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, brown sugar, granulated sugar, and peanut butter until creamy. Add egg and vanilla; mix well.
  3. Combine flour, baking powder, baking soda, and salt in a separate bowl; then gradually mix into the wet ingredients until just combined.
  4. Fold in oats and three-fourths of the chocolate chips by hand.
  5. Using about three tablespoons of dough per cookie ball, shape them and place on prepared sheets.
  6. Bake for 10–12 minutes until just set but still soft in the center.
  7. Let cool on sheets for at least 10 minutes before transferring to wire racks.
