  • 8 oz fresh mozzarella
  • 2 medium ripe peaches
  • 2 medium heirloom tomatoes
  • ½ cup fresh basil
  • 2 tbsp extra virgin olive oil
  • 12 tbsp balsamic reduction (optional)
  • ½ tsp kosher salt
  • ½ tsp ground pepper

Instructions

  1. Slice mozzarella into ½” pieces.
  2. Halve peaches, remove pits, and cut into bite-sized wedges.
  3. Core tomatoes, slice in half, and cut into wedges.
  4. Tear or chop basil leaves.
  5. In a large bowl, combine mozzarella, peaches, tomatoes, and basil. Drizzle with olive oil and season with salt and pepper. Toss gently.
  6. Add balsamic reduction if desired and serve immediately.
