  • 1 (1-pound) box tri-color rotini pasta
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 2 cups cherry tomatoes (sliced in half)
  • 1/2 red onion (sliced)
  • 1 cup sliced olives
  • 8 ounces small mozzarella balls (bocconcini)
  • 1 cup Italian dressing
  • 2 tablespoons chopped fresh herbs (parsley or basil)

Instructions

  1. Boil tri-color rotini in salted water until al dente (8–10 minutes). Drain and rinse under cold water.
  2. Chop the red and green bell peppers, slice cherry tomatoes and red onion, and prepare olives and mozzarella balls.
  3. In a large mixing bowl, combine cooled rotini, chopped veggies, olives, and mozzarella.
  4. Drizzle Italian dressing over the mixture and gently toss to combine.
  5. Add chopped herbs and mix again. Cover and refrigerate for at least two hours before serving.
