  • 2 lbs red potatoes
  • 1 stick butter (1/2 cup)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) with a stick of butter in a 9×13 baking pan.
  2. While the butter melts, cut each washed potato in half and score lightly across the cut side.
  3. In a small bowl, mix grated Parmesan cheese, herb seasoning, salt, and black pepper.
  4. Once the butter is melted, sprinkle half of the seasoning mixture into the pan and place the potatoes cut side down on top.
  5. Spray potato tops with nonstick spray and sprinkle with remaining seasoning.
  6. Bake uncovered for about 40 minutes or until tender when poked with a fork.
