  • 4 (6 ounce) salmon fillets (cut into cubes)
  • 2 tablespoons oil
  • 2 teaspoons minced garlic
  • 1 tablespoon fresh grated ginger
  • 3/4 cup fresh orange juice
  • 23 tablespoons honey
  • 1 tablespoon rice vinegar
  • 3 tablespoons low sodium soy sauce or tamari
  • 12 tablespoons orange zest
  • 1 tablespoon cornstarch
  • 1/2 teaspoon red pepper flakes
  • 2 cups cooked white or brown rice
  • 2 cups cooked broccoli

Instructions

  1. In a bowl, whisk together 3/4 cup fresh orange juice, 2 tablespoons honey, 1 tablespoon rice vinegar, 3 tablespoons low sodium soy sauce or tamari, minced garlic (2 teaspoons), grated ginger (1 tablespoon), and red pepper flakes (1/2 teaspoon).
  2. Add salmon cubes to the marinade and let sit for 15 minutes.
  3. Heat oil in a pan over medium-low heat; sauté garlic and ginger for 2 minutes.
  4. Add marinated salmon cubes to the pan; cook until golden brown on each side (about 3-4 minutes).
  5. In a saucepan, bring remaining marinade to a low boil; mix cornstarch with water to create a slurry and add to thicken the sauce.
  6. Pour thickened sauce over the cooked salmon and simmer for a couple of minutes before serving over rice with broccoli.
