- 4 (6 ounce) salmon fillets (cut into cubes)
- 2 tablespoons oil
- 2 teaspoons minced garlic
- 1 tablespoon fresh grated ginger
- 3/4 cup fresh orange juice
- 2–3 tablespoons honey
- 1 tablespoon rice vinegar
- 3 tablespoons low sodium soy sauce or tamari
- 1–2 tablespoons orange zest
- 1 tablespoon cornstarch
- 1/2 teaspoon red pepper flakes
- 2 cups cooked white or brown rice
- 2 cups cooked broccoli
- In a bowl, whisk together 3/4 cup fresh orange juice, 2 tablespoons honey, 1 tablespoon rice vinegar, 3 tablespoons low sodium soy sauce or tamari, minced garlic (2 teaspoons), grated ginger (1 tablespoon), and red pepper flakes (1/2 teaspoon).
- Add salmon cubes to the marinade and let sit for 15 minutes.
- Heat oil in a pan over medium-low heat; sauté garlic and ginger for 2 minutes.
- Add marinated salmon cubes to the pan; cook until golden brown on each side (about 3-4 minutes).
- In a saucepan, bring remaining marinade to a low boil; mix cornstarch with water to create a slurry and add to thicken the sauce.
- Pour thickened sauce over the cooked salmon and simmer for a couple of minutes before serving over rice with broccoli.
