  • 18 to 24 ounces bread cubes (preferably toasted or stale)
  • 1 cup unsalted butter
  • 3 cups diced sweet onion
  • 2 cups diced celery
  • 6 garlic cloves (minced)
  • Kosher salt and pepper (to taste)
  • 3 tablespoons chopped fresh sage
  • 3 tablespoons chopped fresh parsley
  • 3 tablespoons chopped fresh rosemary
  • 2 1/2 cups chicken or vegetable stock
  • 2 large eggs

Instructions

  1. Prepare your bread cubes by cutting stale or toasted bread into cubes and letting them sit overnight in a baking dish covered loosely with foil. Alternatively, toast them in the oven at 350°F for about 15 minutes until golden brown.
  2. Sauté the diced onions, celery, and minced garlic in melted butter over medium heat with salt and pepper for about 8 to 10 minutes until softened.
  3. Stir in the chopped sage, parsley, and rosemary; cook for another minute before adding one cup of stock.
  4. Pour the mixture over the bread cubes in a large bowl, tossing until well-coated.
  5. In a small bowl, whisk together the remaining stock and eggs; pour over the bread mixture and gently fold everything together.
  6. Transfer to a buttered baking dish and bake at 350°F for about 45 to 50 minutes until golden brown.
