  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup fresh orange juice
  • 1/4 cup milk
  • 2 large eggs
  • 1 tbsp orange zest
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line your muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine melted butter, orange juice, milk, eggs, orange zest, and vanilla extract.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined; some lumps are okay.
  5. Fill muffin cups two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let cool in the tin for five minutes before transferring to a wire rack.
