  • ¾ cup buttermilk
  • ½ cup vegetable oil
  • Zest of 3 oranges (35 Tbsp)
  • ¼ cup fresh squeezed orange juice
  • 1 â…“ cup powdered sugar
  • 3 Tbsp fresh squeezed orange juice (for glaze)

Instructions

  1. Preheat your oven to 425°F and line a muffin pan with liners.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, buttermilk, vegetable oil, orange zest, and fresh juice until blended.
  4. Combine dry ingredients into wet ingredients; mix gently.
  5. Let the batter rest for about 15 minutes.
  6. Fill muffin liners generously and sprinkle sanding sugar on top if desired.
  7. Bake at 425°F for the first seven minutes; then reduce to 350°F and bake for an additional 13-16 minutes until golden brown.
