Ingredients

Scale
  • 1 cup (2 sticks / 227 g) unsalted butter (melted)
  • 2 cups (400 g) brown sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs (room temperature)
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon kosher salt
  • 2 ripe bananas (mashed, some chunks are okay – about â…” cup)
  • ½ cup (1 stick / 113g) unsalted butter (room temperature)
  • 2 cups (250 g) confectioners' sugar (sifted)
  • ½ teaspoon kosher salt
  • ¼ cup (82 g) caramel topping
  • 1 ½ teaspoons whole milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix melted butter and brown sugar until well combined. Stir in vanilla extract and eggs until smooth.
  3. In another bowl, whisk together flour and salt. Gradually add this mixture to the wet ingredients, stirring gently until just combined; do not overmix.
  4. Fold in mashed bananas, leaving some chunks for extra texture.
  5. Pour batter into a greased baking pan and bake for about 40-45 minutes, or until a toothpick comes out clean.
  6. For the frosting, beat room temperature butter until creamy, then gradually add confectioners' sugar and salt. Mix in caramel topping and adjust with milk as needed for consistency.
  7. Once cooled, frost the bars generously, cut into squares, and serve.
