  • 1 pound chicken (thawed, drained, and patted dry)
  • 8 oz orzo pasta
  • 3 cups low sodium chicken broth
  • 1/4 cup coconut cream
  • 1/2 cup sun-dried tomatoes (julienned)
  • 2 cups baby spinach
  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red chili pepper flake
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. In a large pot, season chicken with sun-dried tomato oil, salt, pepper, and smoked paprika. Cook over medium heat until pink and cooked through. Remove chicken from pot.
  2. In the same pot, melt butter and sauté minced garlic and red pepper flakes until fragrant. Add chicken broth, coconut cream, sun-dried tomatoes, uncooked orzo, and seasoning; bring to a simmer.
  3. Cover and cook until orzo is tender (about 10 minutes). Stir in nutritional yeast until melted; add spinach and chicken back into the pot. Mix gently until spinach wilts.
