  • 4 oz sharp cheddar cheese, shredded

  2. Stir in garlic, oregano, thyme; cook for another minute until fragrant.
  3. Add flour and stir to coat; cook for an additional minute.
  4. Gradually pour in vegetable broth while scraping any bits off the bottom of the pot.
  5. Add potatoes, corn, and broccoli; cover and bring to a simmer.
  6. Reduce heat to low; simmer for about 10-12 minutes until potatoes are tender.
  7. Remove from heat and stir in heavy cream and cheese until melted.
  8. Serve garnished with parsley and shredded cheese.
