  • 1 pound Orzo pasta
  • 1.5 pounds Shrimp, peeled and deveined
  • 4 cups Chicken broth (low-sodium recommended)
  • 1 medium Yellow onion, diced
  • 4 cloves Garlic, minced
  • 1 cup Parmesan cheese, grated
  • ½ cup Heavy cream
  • 2 tablespoons Olive oil (extra virgin)
  • 1 Lemon, juiced and zested
  • ¼ cup Fresh parsley, chopped

Instructions

  1. In a large skillet over medium heat, warm olive oil and butter. Add diced onion and sauté until softened (about 5 minutes). Stir in minced garlic.
  2. Add orzo to the skillet and toast for 1-2 minutes. If using white grape juice, pour it in now.
  3. Add chicken broth along with lemon zest. Bring to a boil then reduce heat to low; cover and simmer for about 10-12 minutes.
  4. Uncover the skillet and stir in shrimp. Cover again and cook for another 3-5 minutes until shrimp turn pink.
  5. Remove from heat; stir in Parmesan cheese and heavy cream until well combined.
  6. Finish with fresh lemon juice and parsley before serving hot.
