  • 4 boneless, skinless chicken thighs, cut into bite-sized pieces
  • 12 oz chicken sausage, sliced
  • 1 ½ cups long-grain white rice, rinsed
  • 3 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and sausage; cook until browned (about 5-7 minutes). Remove from skillet and set aside.
  2. In the same skillet, sauté onion and bell pepper for 3-4 minutes until softened. Add garlic; cook for another minute.
  3. Stir in rice, Cajun seasoning, and smoked paprika; coat rice well.
  4. Pour in chicken broth, return chicken and sausage to the pan, cover, and simmer on low for 18-20 minutes until rice is tender.
  5. Fluff the rice with a fork, garnish with parsley if desired, and serve hot.
