  • 8 oz egg noodle pasta
  • 3 tablespoons butter
  • 1.5 pounds cremini mushrooms
  • 1 onion
  • 3 cloves garlic
  • 1/2 cup dry white grape juice
  • 1.5 cups mushroom stock
  • 2 tablespoons flour
  • 1/2 cup sour cream or Greek yogurt
  • Fresh thyme
  • Dijon mustard
  • Smoked paprika
  • Sea salt
  • Black pepper

Instructions

  1. Cook egg noodles according to package directions in salted water; drain and toss with one tablespoon of butter.
  2. In a large skillet, melt two tablespoons of butter over medium heat. Sauté halved cremini mushrooms until browned (5–7 minutes). Remove and set aside.
  3. In the same skillet, add remaining butter, sliced onions, and crushed garlic; sauté until tender (about 3–4 minutes).
  4. Deglaze the pan with grape juice and simmer briefly.
  5. Mix flour into mushroom stock and add slowly to the skillet with mushrooms, thyme, mustard, and paprika; stir to combine.
  6. Temper sour cream by mixing it with some hot sauce before adding it to the skillet; stir well.
  7. Season with salt and pepper to taste before serving over noodles.
