  • 10 oz. mushrooms (button or baby bella)
  • 2 large boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 ½ cups beef broth
  • 1 teaspoon soy sauce
  • 3 cloves garlic (minced)
  • 1/3 cup heavy cream
  • Salt
  • Pepper
  • 2 Tablespoons salted butter
  • 34 Tablespoons olive oil
  • 1 chicken bouillon cube or 1 tsp better than bouillon
  • 1 teaspoon onion powder
  • ½ teaspoon EACH: mustard powder, dried thyme
  • 3 Tablespoons cornstarch
  • ½ cup dry white grape juice

Instructions

  1. Season the chicken breasts with salt and pepper and dredge in flour.
  2. Heat olive oil in a skillet over medium-high heat; brown the chicken on both sides (5-6 minutes per side).
  3. Remove chicken from the skillet, add butter, and sauté mushrooms until browned.
  4. Add garlic, onion powder, mustard powder, and thyme; stir in beef broth while scraping the pan.
  5. Thicken the sauce with cornstarch mixed with grape juice and soy sauce; simmer until thickened.
  6. Stir in heavy cream and return chicken to the skillet; heat through before serving.
