  • 2 tablespoons chopped fresh rosemary
  • 1/4 cup grated Parmesan cheese
  • 4 cups water (for boiling)
  • 1/4 cup baking soda

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast; let sit until frothy (about 5 minutes).
  2. Gradually add flour and salt to the yeast mixture, stirring until combined. Knead on a floured surface for about 8 minutes until smooth.
  3. Shape dough into a ball, place in an oiled bowl, cover with a kitchen towel, and let rise in a warm spot for 30-45 minutes until doubled in size.
  4. Preheat oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  5. In a bowl, mix mozzarella cubes with rosemary and Parmesan cheese.
  6. Divide risen dough into eight equal portions; roll each into a rope about 24 inches long. Flatten slightly and place filling in the center; pinch edges to seal.
  7. In a large pot, bring water to a boil; stir in baking soda. Boil each pretzel for about 30 seconds before transferring to the baking sheet.
