  • 5 TBSP Unsalted butter
  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract
  • 1/2 cup All-purpose flour
  • 3/4 cup Unsweetened cocoa powder (Dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour
  • 1 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1/3 cup Brown sugar (packed light or dark)
  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&Ms

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together sugar, eggs, butter, oil, and vanilla until smooth. Stir in flour, cocoa powder, cornstarch, salt, and both types of chocolate chips until well combined.
  3. Pour brownie batter into a greased baking dish and bake for about 20 minutes.
  4. For the cookie layer, cream together softened butter with sugars and peanut butter; mix in vanilla and egg. In another bowl, combine flour, cornstarch, baking soda, baking powder, and salt; add to wet mixture along with oats and chocolate chips.
  5. Spread cookie dough over baked brownies and return to the oven for an additional 20 minutes or until set.
  6. Allow to cool before slicing into bars.
