  • 11 1/2 tbsp unsalted butter
  • 1/2 cup + 2 tbsp light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp fine sea salt
  • 3/4 cup crushed kettle potato chips
  • 1/3 cup walnut pieces
  • 1/2 cup chopped bittersweet or semi-sweet chocolate bar
  • 1/4 cup desiccated coconut

Instructions

  1. Preheat your oven to 350 F (180 C) and line two baking sheets with parchment paper.
  2. Melt the unsalted butter until warm but not bubbling. In a mixing bowl, whisk it with both sugars for about one minute.
  3. Add one egg, an egg yolk, and vanilla extract; whisk until combined.
  4. Gently fold in flour, baking soda, and salt until just mixed.
  5. Fold in the potato chips, chocolate, walnuts, and coconut until incorporated. Let the dough rest for ten minutes.
  6. Scoop portions onto prepared baking sheets, leaving space between each scoop.
  7. Bake for 8–10 minutes until edges are lightly golden.
  8. Optionally press extra toppings into cookies right after baking and cool on a wire rack.
