  • 125 g softened unsalted butter
  • 175 g caster sugar
  • Zest of 1 Meyer lemon
  • 2 eggs
  • 175 g plain flour
  • 10 g baking powder
  • Pinch of fine salt
  • 60 ml milk
  • Juice from 23 Meyer lemons
  • 50 g icing sugar

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a 20 cm (8 inch) cake tin.
  2. In a mixing bowl, cream together the softened butter, caster sugar, and lemon zest until light and fluffy.
  3. Beat in the eggs one at a time until fully incorporated.
  4. Gently mix in the plain flour, baking powder, and salt until just combined.
  5. Stir in the milk until you achieve a smooth batter.
  6. Pour the mixture into the prepared cake tin and bake for about 45 minutes or until a skewer comes out clean.
  7. While baking, prepare the syrup by combining lemon juice and icing sugar over low heat until dissolved.
  8. Poke holes in the warm cake and pour the syrup over it so it absorbs well.
  9. Let cool completely before serving.
