  • 2 lbs boneless, skinless chicken breast
  • 3 cups sweet corn (canned or fresh)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 tbsp lime juice
  • 1½ tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • Optional: 1/4 tsp cayenne pepper
  • For garnish: 1/4 cup crumbled queso fresco and chopped cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix sweet corn, mayonnaise, sour cream, lime juice, chili powder, salt, garlic powder, and cayenne pepper until well combined.
