Ingredients

Scale
  • 1 pound flank steak
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/2 cup crumbled feta cheese
  • 1 cup cooked quinoa
  • 1 lemon, juiced
  • 1/4 cup hummus
  • 1/4 cup tzatziki sauce

Instructions

  1. Marinate the steak: Combine olive oil, minced garlic, oregano, cumin, salt, and pepper in a bowl. Coat the flank steak with this mixture and let it marinate for at least 15 minutes.
  2. Grill the steak: Preheat your grill or skillet over medium-high heat. Add olive oil and grill the flank steak for 4-5 minutes per side until cooked to your liking. Let it rest for 5 minutes before slicing.
  3. Prepare the salad: In a large bowl, mix cherry tomatoes, cucumber, red onion, parsley, and feta. Drizzle with lemon juice and season with salt and pepper.
  4. Assemble: Divide cooked quinoa among bowls. Top with sliced steak and salad. Add dollops of hummus and tzatziki before serving.
