  • 12 ounces dry pasta (farfalle recommended)
  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 2/3 cup kalamata olives, sliced
  • 4 ounces crumbled feta cheese
  • Half medium red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon freshly-squeezed lemon juice
  • 2 teaspoons dried oregano, minced
  • 1 teaspoon honey (or your desired sweetener)
  • 2 small garlic cloves, minced
  • 1/4 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon salt
  • Pinch of crushed red pepper flakes

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, prepare the vegetables: dice cucumber, halve tomatoes, and slice red onion.
  3. In a mixing bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, honey, oregano, black pepper, salt, and crushed red pepper flakes.
  4. In a large bowl, combine cooked pasta with cucumbers, tomatoes, olives, red onion, and feta cheese. Drizzle dressing over the mixture and toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving for enhanced flavors.
